A quick, simple, super healthy chocolatey treat sounds a little too good to be true but this vegan avocado chocolate mousse is exactly that. I first tried avocado chocolate mousse at Ellary’s Greens in New York’s West Village. It was one of my favorite healthy brunch spots. This mousse is inspired by their version; it’s just a simple treat. I’m not one of those people who can get on board with replacing dessert with no carb no butter no sugar options. I’m more of balance kind of person. For me this recipe falls under “healthy sweet snack” rather than “dessert” – in my opinion it isn’t meant to replace dessert. Consider that a disclaimer!
- Half large avocado (150-170g)
- 1 tbsp cocoa powder
- 2 tbsp maple syrup/honey/coconut sugar/sugar
- ½ tsp vanilla
- Blend everything. Transfer to a bowl and chill for half an hour in the fridge before eating.
