Pina coladas have always been my vacation drink – there’s nothing like sipping on one at a pool bar or (being like me and) taking it from the pool bar to the beach. When I was in Mauritius earlier in August, I gave it some thought as I was sitting at the restaurant by the beach (the problem with writing about food and drinks is that you’re always thinking about stuff like this). If you think about the flavors, it’s pretty simple – coconut, pineapple, rum and it needs to be icy. I made a mental note to come back and try it at home, which is how I discovered that 3 ingredients will make you these easy all-natural pina coladas.
I lucked out since apparently it is pineapple season here in Calcutta. Either way, there’s always a stock of frozen pineapple in our freezer always because everyone loves pineapple (on pizza, in raita too!) at my in-law’s. I always use fresh homemade coconut milk and stay away from the cans and tetrapacks because I’m wary of carrageenan (a thickener that may cause digestive issues and inflammation). Why not take advantage of the fact that fresh coconuts are always available here and that most of us have domestic help in India to help with the effort. And of course, rum!
For some reason, pina coladas never seemed like an approachable drink. Maybe it’s the way they’re dressed up or advertised – with the pre-mixes and syrups and cherries and all that. I’m into simple things (see my recipe for easy white wine sangria). If you can get the same results with less drama, fuss, mess and time, I’m sold. This recipe for easy all-natural pina coladas is vegan, has no added sugar or fake sugar and contains all the goodness from the fruit and fresh coconut milk. If you don’t drink alcohol, skip the rum and make a delicious smoothie mocktail.
- 1 cup (250ml) coconut milk
- 200g frozen pineapple
- 90ml white rum
- Blend the ingredients in a mixer/blender.
- Serve immediately; add ice if required.
