ABC Kitchen-inspired Kale Salad

ABC Kitchen is one of my favorite restaurants in New York – they have an excellent selection for vegetarians and focus on organic food. Their Kale Salad is one of my regular orders on the menu – I attempted to recreate it and it came fairly close!

You can find kale by Trikaya in Crawford Market, Nature’s Basket and Foodhall in Mumbai. Serrano peppers are easily available in local markets as well. Read about kale’s health benefits here!

ABC Kitchen-inspired Kale Salad
Recipe type: Salad
Cuisine: American
  • 4-5 stalks of kale, chopped finely (tear off the leaves from the middle – you don’t want to eat the thick, coarse stalk)
  • A handful of mint leaves, chopped
  • 1 Serrano pepper, de-seeded and finely chopped
  • For the dressing:
  • 1 tbsp olive oil
  • Juice of 1½ lemons
  • A pinch of salt
  1. Whisk the ingredients for the dressing together in a bowl. Toss the kale, mint and Serrano pepper with the dressing.
